Pickled Cucumber Salad

Here's one to take advantage of the late summer cucumbers while we still have them, from Joe Kopcha.

Pour about one and a half cups of white vinegar in a bowl. Add about 1/2-cup sugar (or 6 packs of Equal) and stir until dissolved.

Meanwhile, peel, slice and layer 3 cucumbers into a colander, heavily salting each layer. Let it drain in the sink for a few hours.

Dump the cucumbers in the vinegar and add one sliced up onion. Let it all sit for a bit in the refrigerator to let the flavors mingle.
